What is Celiac Disease?

Celiac disease is a health problem related to the stomach. People with celiac disease cannot eat gluten. Gluten is a type of protein found in wheat, barley, and rye. It is in many foods like bread, pasta, cake, and cookies.

If a person with celiac disease eats gluten, their body attacks the small intestine. This makes the intestine weak and stops the body from absorbing essential nutrients like vitamins and minerals. Because of this, people feel tired, weak, and sick.

If someone with celiac disease eats gluten by mistake, they can feel stomach pain, gas, diarrhea, headache, and tiredness. Some people also get skin rashes. These problems can last a few days and make life difficult.

Cooking for Someone with Celiac Disease

– Always check the ingredients on food packages. Gluten can hide in sauces, spices, or even ice cream.
– Choose foods that say “gluten-free” clearly.
– Be careful about cross-contamination. Even small pieces of bread or pasta can cause problems.
– Do not use the same tools (like knives, toasters, or spoons) for gluten and gluten-free food.
– When cooking, use clean tools and a clean table for gluten-free food.
– At events, make a special place for gluten-free food. Use clear signs and different tables so people with celiac can eat safely.

Gluten-Free Recipe Ideas

Here are some easy and safe foods:
– Gluten-free pancakes: Mix gluten-free flour, eggs, milk, and a little sugar. Cook in a clean pan with butter.
– Buckwheat salad: Boil buckwheat. Mix it with fresh vegetables, olive oil, and lemon juice.
– Gluten-free pizza: Use gluten-free pizza crust. Add tomato sauce, cheese, and toppings. Bake in the oven.
– Corn flour cookies: Mix corn flour, butter, sugar, and an egg. Shape them and bake.
– Lentil chips: Cook red lentils. Blend and spread them thin on baking paper. Bake until crispy.
– Banana cake with buckwheat flour: Mash bananas, mix with eggs, buckwheat flour, and a little baking powder. Then bake.

Living with Celiac Disease

Celiac disease is not only about food. It also changes daily life and feelings. Eating outside, going on trips, or joining school events can be hard.

For example, my friend in Ankara has celiac. She says shopping is difficult because she reads every label. Many products don’t clearly state if they are gluten-free.

At school canteens, it is also hard to find safe food. Many snacks and sandwiches contain gluten. Some students bring food from home or skip meals.

But in Ankara, there are some good places. Ankara Pasta makes gluten-free cakes. Cemali Cafe (in Kızılay) has gluten-free cookies and muffins. These places are safe and help people eat out without worry. They cook in clean areas to prevent gluten from mixing.

Also, in Ankara and big markets, it is easier to find gluten-free snacks now. You can buy gluten-free crackers, rice cakes, corn chips, granola bars, and biscuits. Shops like Macrocenter, Migros, and CarrefourSA have special gluten-free areas. These snacks are good for trips and provide more food choices.

Support groups are also important. “Çölyakla Yaşam Derneği” and “Ankara Celiac Association” help people with celiac disease. They share ideas and help people find safe foods and shops.
